Recipe: Peanut Butter Nutella Cookies


Peanut butter? Love.  Nutella? Love.  Cookies? Love.  I came across this recipe on Erica's Sweet Tooth and I knew I had to give it a go.  The end result was absolute perfection though if you are looking for a distinct Nutella taste I would suggest adding a little extra.  These cookies tasted like my favorite peanut butter cookies with the faintest taste of chocolate, YUM.  I've been baking like a fiend lately so I decided to half this recipe, I have a feeling that if I made the whole recipe they'd all be gone within a few days.  Just trying to save my family a few calories ;)

Peanut Butter Nutella Swirl Cookies
Recipe adapted from Delightful Bitefuls

1/2 cup unsalted butter, at room temperature
3/4 cup smooth peanut butter {spoonful extra} 
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1/2 tsp vanilla extract {doubled}
3/4 tsp baking soda
1/4 tsp salt
1-3/4 cups all purpose flour
1/4 cup Nutella {added an extra 1/4 of what is called for}

- Preheat oven to 350 degrees.
- In the bowl of an electric mixer, beat together butter, peanut butter, and sugars until light and fluffy, about 2-3 minutes.
- Add in the egg and vanilla and beat until well combined.
- In a separate bowl, whisk together flour, baking soda, and salt. With mixer on low, slowly incorporate the dry ingredients into the butter mixture until just combined.
- Microwave Nutella for 20 seconds and then drizzle over the dough. Fold in Nutella with a spatula until well-distributed throughout the dough.
- Chill the dough in the fridge for 15 minutes and then roll small balls by hand.
- Place about an inch apart on a parchment paper-lined cookie sheet and use a fork to press down the balls slightly.
- Bake until the edges are lightly browned, about 8-10 minutes.
- Allow cookies to cool on the pan for 2 minutes, and then transfer to a cooling rack to cool completely.

    1. You're welcome! I might suggest adding a bit extra Nutella, they were a great consistency but they could be chewier, depends on what you like I guess :)
